CHARACTERISTICS OF PROBIOTIC STRAINS FOR THE DEVELOPMENT OF PREVENTIVE DRINKS

Объекты исследования – молочнокислые бактерии (МКБ), выделенные из биологических образцов, и коллекционные штаммы МКБ. Цель характеристика штаммов пробиотиков для разработки напитков профилактического назначения. В процессе работыпроведен скрининг пробиотически активных МКБ, в результате которого отобрано 17 наиболее культур, среди которых 13 коллекционных Биобанка промышленных микроорганизмов Республиканской коллекции 4 лабораторных изолята. Изучен пробиотический потенциал бактерий: продукция молочной кислоты, антагонизм к условно-патогенным микроорганизмам, адгезивные свойства, устойчивость неблагоприятным условиям желудочно-кишечного тракта (ЖКТ). Идентификация с использованием системы Bruker MALDI-TOF Biotyper позволила отнести изоляты следующим видам: Lactobacillus casei, paracasei, plantarum. проведенных исследований созданы консорциумы стартерных культур paracasei 2А, casei Y1, plantarum 1А, А, brevis LB B-RKM 0610 отобран оптимальный вариант, соответствующий основным технологическим характеристикам учетом биосовместимости включения состав разрабатываемого напитка The objects of study are lactic acid bacteria (LAB) isolated from biological samples and collection strains LAB Purpose - characterization probiotic for the development preventive drinks In course work, screening probiotically active was carried out, as a result which cultures were selected most active, among them Biobank Industrial Microorganisms Republican Collection laboratory isolates. potential studied, which, production acid, antagonism to opportunistic microorganisms, adhesive properties, resistance adverse conditions gastrointestinal tract.
